Cognac
Cognac is a prestigious wine spirit produced under Appellation Contrôlée (AC) regulations exclusively in Cognac, France.
The Cognac region, which surrounds the town of Cognac in the Charente
and Charente-Maritime departments just north of Bordeaux, is divided
into six districts: Grand Champagne,Petit Champagne, Borderies, and
Fins Bois, Bons Bois and Bois Ordinaires. The term champagne
has nothing to do with the sparkling wine – it refers to the shared type
of chalky soil, which is thought to produce the best wines. Hence the
two champagne districts supply the base wines for distilling into the
finest cognacs – Fine Champagne Cognac.
